I use only FIOS Internet and I would like to remove the Actiontec router altogether and use my own router. Can I buy a Coax to Ethernet adapter using the exisitng coax wiring to do this?

No.  And currently you cannot buy a "moca" router on the open market.  Actiontec's is the only one that will work with FiOS.  You can, however request that Verizon convert you over to an ethernet connection.  There may be a charge for this, and then you could utilize your own router.  But, for the tv service to work properly, you will need to use the actiontec in the configuration somewhere to give the set top boxes a connection to the internet.  Verizon will not support using another router.
